Oven Roasted Mojito Chicken


  • 1 3-31/2 lb. Chicken (cut up)
  • 1 Cup Dinosaur Mojito Marinade
  • 1 Lg. Onion (cut into ½ in. rounds)
  • 2 Tbls. Fresh Italian Parsley
  • Salt and Pepper

Marinate chicken in Mojito Marinade for at least 2 hrs. in a zip lock bag. Preheat oven to 375°. Place cut-up onion on bottom of roasting pan. Place marinated Chicken on top of onion in pan along with any excess marinade. Roast approx. 1 hr. 10 min. until chicken is done. Remove chicken from roasting pan and top with cooked onions and pan juice. Salt and pepper to taste and garnish with parsley.
