Parmesan Pepper Bruchetta


1 loaf Italian or French Baguette bread, sliced ¼" thick
Dr. Pete’s Parmesan Peppercorn dressing
¼ cup olive oil
¾ cup chopped red onions
8-10 Roma tomatoes, diced
Chopped fresh basil

Preheat oven to 400 degrees. Place bread slices on baking sheet, lightly brush tops with olive oil. Bake until lightly toasted, about 4 minutes. Remove from oven and cool slightly. Keep oven at 400.Mix onions, tomatoes, basil, and ¼ cup olive oil. Top each bread slice with this mixture and drizzle Dr. Pete’s Parmesan Peppercorn dressing on top. Bake 5 minutes. Serve warm. Supposedly serves 8-10, but is so popular, we recommend making 2 loaves!
